odka bottles with ripe damsons, add 250 grams of sugar to each bottle and top up with vodka, you will probably need a little more than 1 litre of vodka.

Close the lid on bottle and give it a good shake, Shake the bottles every day till all sugar is dissolved.

Allow the damsons to macerate in vodka for at least 3months, you can then strain and bottle your delicious damson vodka.

The lovely drunken damsons are perfect for deserts, just remove stones, or they make great filling for truffles.

You can drink your vodka when it is 3 months old but a 6 month mellowing makes it really sing.
